Easiest Roasted Salmon
This is my favorite way to cook salmon because it’s completely hands off and doesn’t dirty up the stove.
Definitely give the potlatch seasoning a try — it’s SO good. You’ll never want to season it another way.
When it comes to sourcing your salmon, I prefer to purchase it online from either Vital Choice or Seatopia instead of the grocery store. You could also go to a fish monger if there’s one in your area to ensure you’re getting the freshest product possible.
Easiest Roast Salmon
Serves 4
Ingredients:
1-2 lbs wild-caught salmon, cut into 6 ounce portions
1 Tbs. olive oil
fine sea salt, to tasteSEASONING
Keep it as is or try one of these —
Potlatch seasoning
Moruno spice
Lemon zest + Thyme
Equal parts dijon + maple syrup
Directions:
Preheat oven to 400 degrees.
Line a sheetpan with parchment paper and place salmon filets skin-side down.
Top with a drizzle of olive oil, sprinkling of salt, and your seasoning of choice.
Roast in the oven for 10-12 minutes depending on the size and thickness of your filets and how you prefer your salmon cooked.
Personally, I like individually portioned 6 ounce pieces which tend to cook in 10-12 minutes. You’ll know it’s done when a knife inserted into the center feels warm to the touch and the fish feels firm + flakes a bit. Or if you have a meat thermometer, the internal temperature should read 145º F.
If you’re cooking a whole side of salmon or a thicker piece, the timing could take 15-20 minutes.
Salmon will keep up to two days in the fridge for leftovers.
